Interesting counter

I think the point of New Orleans food is that the "slave grub" was mixed years ago with European (including classic French) and native stuff to create something very unique.

What is your repast of choice?

Got your food wrong first off, at least the names.

Rice and peas is an African/Caribbean name, you want to ask for red beans and rice with Andouille (ann-doo-eee). Used to cooked with the washing on all day on Mondays but modern world being what it is, probably get it any day.

If you are thinking corn, again maybe a little off or in the surrounding states where they can grow it "as high as an elephant's eye." More Southern/soul than New Orleans specific, which has Spanish and old French and French Canadian influences to give it Creole and Cajun cuisine.

(Come up to Alberta for the best corn you will ever have, grown in a place called Taber)

The dishes you should look for in order of my favourites

Jambalaya, Gumbo, Catfish po-boy (a sandwich) Crawfish etoufee and otherwise, Creole cream cheese ice cream with praline, beignets, King Cake is not special to eat but is an experience.

Depends what you're looking for.

Bourbon Street (especially at the weekend) is an experience for sure but probably not to everyone's taste.

Of the touristy stuff I'd say a swamp/bayou boat trip is a bit of a must-do. Among the abundant music I recommend you seek out some zydeco: great stuff imho
